The History of Richard Corrigan & Corrigan’s Mayfair 

Richard Corrigan has long been one of the UK and Ireland’s most respected chefs, known not only for his Michelin-starred cooking but for his genuine passion for provenance, seasonality, and sustainability. Having grown up on a farm in County Meath, Ireland, Corrigan developed a deep appreciation for the land and a profound respect for quality ingredients. Values that would go on to shape his entire culinary career. After gaining acclaim with the award-winning Lindsay House, Corrigan turned his sights to a bold new venture in the heart of Mayfair.

In 2008, he took over what would become Corrigan’s Mayfair, transforming it into a restaurant that reflected his vision of modern British and Irish dining rooted in heritage. With a strong belief that a restaurant should have soul, Corrigan poured his identity into every detail, from the menu and sourcing philosophy to the atmosphere, decorative touches, and service ethos. Gone were the trends and formalities that lacked authenticity; in their place came a space filled with personality, warmth, and genuine hospitality.

Under his leadership, Corrigan’s Mayfair quickly became one of London’s most celebrated dining destinations, earning three AA Rosettes, multiple industry accolades, and a passionate and loyal following.

Drawing from his rural upbringing in County Meath, Corrigan brings a profound respect for the land and a deep-rooted knowledge of farming, fishing, and foraging. Meanwhile, Dickie’s Bar, a favourite of Corrigan’s, is a true expression of his character: warm, intimate, and stocked with one of London’s largest selections of Irish whiskey. It’s the kind of bar where the drinks are impeccably made, the company is good, and the atmosphere is always just right. In fact, Dickie’s Bar is so loved by Chef Corrigan, you may even see him in there the next time you’re in for a tipple.

While Corrigan’s Mayfair is the Richard Corrigan restaurant that bears his name, there are four other restaurants that sit alongside it in the Corrigan Collection. At the heart of Soho, Bentley’s Oyster Bar & Grill is a true London institution and Corrigan Collection gem. Serving the freshest native oysters, fish, and shellfish since 1916, Bentley’s has thrived under Corrigan’s stewardship, combining classic seafood dishes with a touch of modern flair. Downstairs, the Oyster Bar offers a charming, informal space, while the upstairs Grill Room provides a more refined and elegant dining experience for evening meals, Pre-Theatre dining and a la carte meals. 

In East London, Daffodil Mulligan brings Richard’s Irish heritage and bold flavours to the table. This energetic Shoreditch restaurant and bar offers sharing plates, live music, and a buzzing late night scene, alongside Gibney’s London, an authentic Irish pub located below the restaurant, pouring perfect pints and hosting regular live events such as sport, music and comedy. 

Over the pond in Ireland, Virginia Park Lodge is another gem in the crown, a striking hunting lodge turned exceptional wedding and celebration venue. Available for all manner of events, weddings and even some unique dining events led by Chef Corrigan, Virginia Park Lodge was also where Chef Corrigan and his wife got married many years ago. Now owned by Corrigan, Virginia Park Lodge is the site where a huge variety of his produce is grown and shipped across the Collection.
