LES CAVES DE PYRENE
Douglas and Didier from Les Caves de Pyrene have been supplying us for years now- since the days on Lindsay House in Soho. They continue to support us- helping out with the launch of Bentley’s Sea Grill at Harrods and large fundraising events such as the IYF Hibernian Heroes Awards. Specialists in organic, bio-dynamic and natural wines they work with our sommeliers to provide some unusual- but always astounding wines.
Established in 1983 by Sandra and Louis Baxter the business has expanded gradually over time, initially just serving local restaurants- the company now provides game for top restaurants throughout the UK and Europe. We source many types of game from the team, including; Venison, Grouse, Pheasant, Partridge, Wild Duck, Woodpigeon, Hare and Rabbit.
Buying fish locally is something easy to say, but rather difficult to do. This is a company which specialises in supplying top-end restaurants in London. So they pick up from boats they have worked with for years and then transport to us. We take whole fish and do the filleting ourselves. That way we know we get the best.
J AND S GOOSNARGH
Reggie Johnson rears chickens and ducks on a farm on the edge of the Ribble valley. We like that they are slow reared, which means flavour and a good meat to bone ratio. Birds as they should be.
A family enterprise established in 1908. They farm 150 acres outside of London and specialise in salads, soft fruit and herbs. Picking is daily, which means we get them fresh, and the varieties grown are chosen for maximise flavour. Just the kind of company we love to work with.
This is a small rural enterprise supplying wild seasonal food. We love the seasonality aspect, which brings a degree of the unpredictable. What comes one day does not necessary follow the next. But that is how it should be and our menus reflect this. They bring us mushrooms and other fungi, live red signal crayfish, leaves, stems, roots, flowers, seeds and fruits of wild plants.
